Prepare for your road trip properly by making the perfect snacks to enjoy on the road. There’s so much planning that goes into a road trip, so don’t let snacks be another factor to stress about. Instead, make some snacks that are quick, easy and most importantly, tasty. With only a few ingredients and directions, these recipes can be made the night before your trip.
These are 5 easy snack recipes to make for your road trip:
Energy bars
No need to buy granola bars. Do it yourself with these homemade energy bars. All you need are three ingredients and about 10 minutes.
Prep time: 5 minutes
Serves: 8 large bars or 15 small square-shaped bars
Ingredients:
1 cup nuts (raw or roasted)
1 cup fruit
1 cup (12-15 whole) pitted dried dates
Directions:
- Combine the nuts, dried fruit and dates in a food processor. Process continuously until all ingredients are broken down into crumb sized pieces and then until ingredients cling together and gather into balls (about 2 minutes).
- Press into a thick square, roughly 8”x8” in size. Wrap and chill for at least an hour.
- Divide the chilled dough into squares and wrap each bar in wax paper or plastic wrap.
Tip: these bars will stay fresh for three months if stored in a freezer or fridge. Room-temperature bars are also good to eat, meaning either you can keep these bars in a bag or in a cooler on your road trip for a quick snack.
Breakfast cookies
A perfect snack to have for breakfast. Save money on the road by preparing these cookies for your trip instead of stopping for breakfast.
Prep time: 5 minutes
Cook time: 15 minutes
Serves: 12 cookies
Ingredients :
2 bananas
1 cup quick oats
1 tsp cinnamon
Directions:
- Preheat oven to 350 F.
- Mash bananas in medium sized bowl with fork.
- Add quick oats and stir well. Add cinnamon and stir.
- Place rounded tablespoons on greased baking sheet.
- Bake for 15 minutes.
Tip: Add dried fruit, coconut or dark chocolate to make your breakfast cookie even tastier.
Roasted chickpeas
Not only is this super quick and easy, it’s a healthy snack for you to take on your road trip that won’t go bad along the way.
Prep time: 5 minutes
Cook time: 40 minutes
Ingredients:
15.5 ounce can chickpeas, rinsed, drained and patted dry
1 tablespoon olive oil
1 teaspoon smoked paprika
Directions:
- Preheat oven to 425 F.
- Toss chickpeas in olive oil and paprika and spread on a rimmed baking sheet
- Roast until crispy, shaking pan halfway through (about 20 minutes).
Tip: This is a healthy and filling snack to take on the road, plus they won’t go bad. Make a bunch of these easy, tasty chickpeas for your ride and you’ll be full and healthy.
Flourless peanut butter muffins
Healthy, tasty and super easy.
Prep time: 5 minutes
Cook time: 20 minutes
Serves: 12 muffins
Ingredients:
2 medium sized bananas
1 cup natural peanut butter
6 medjool dates (pits removed)
Sea salt optional
Directions:
- Preheat oven to 350 F.
- Mix all three ingredients in a food processor until everything is blended well.
- Bake for 15-20 minutes and let them cool completely before removing from pans.
Tip: These muffins only last for about four days in the refrigerator, so they will be your go-to snack on the beginning of your adventure.
Trail mix
This is the perfect customizable snack- add anything and everything you want to make it the perfect snack for the road.
Prep time: 5 minutes
Serves: 4-5 cups
Possible ingredients:
Raw nuts: almonds, pecans, cashews, peanuts
Seeds: pumpkin seeds, chia seeds, sunflower seeds
Dried fruit: raisins, apricots, cranberries, mangoes
Spices: sea salt, cinnamon, nutmeg
Extra: popcorn, chocolate, pretzels
Directions:
- Combine all ingredients in a large bowl and mix.
- Store in ziploc bags or jars.
Tip: Trail mix will stay fresh for an entire month, so bring lots on your trip.
